Bacon Cheese Brussels Sprouts Frittata

Leftover roasted brussel sprouts ( prep in a food processor before cooking for dinner night before) place a layer in bottom of small skillet with butter, brown a bit, stir in 2 organic eggs, add parmesan cheese to taste, top with layer of grated sharp cheddar cheese, top with cooked, pastured bacon. Cover & cook on low until cheese has melted. Depending on appetite, this is a meal for 1-2 people or make a second skillet. Yummy dinner frittata.
